Does anyone know what the difference is between these 2 functions. I can get "apply style" to work well from the format toolbar, but can't get "paste appearance" which is on the diagram toolbar to do anything even though it becomes active if I right-click on a selected element and choose "Copy appeance to painter".

It looks like the functionality of Paste Appearance has been changed slightly in a recent build, and it hasn't been explained in the help file. I'll add it to the list...
You can set the appearance for an element which applies to the element on all diagrams, or you set it to apply to a single instance on one diagram. Best illustrated with an example:
Create Diagram1 and Diagram2 both with Class1 and Class2. On Diagram1, select Class1 and right-click->Appearance->Adjust Appearance (F4). Change background colour to red. Have a look at Diagram2 and Class1 on Diagram2 will be red as well. Back to Diagram1, select Class1 and right-click->Appearance->Copy Appearance to Painter, select Class2 and click the Paste Appearance button (which should now be enabled). Class2 will be red. Go to Diagram2 and Class2 is still its default colour.
