Does anybodey know if and how it is possible to change the color of notes displayed in a diagram (i.e. the notes of a class). The standard color is so "soft" that it is most often not readable.???

You'll have to change them the same way you do for classes and such. Select one or more notes and press F4, then select the color you want. Remember to clear the Default Color (or whatever it's called) box to enable you to select an alternate background color.
I cannot remember offhand if there is a global default color setting, but if there is, it will likely affect pretty much everything.
You could also experiment with stereotyped notes if you want only a few to stand out, and you want to be able to do this automatically. Then set an alternate color in the Settings | UML | Stereotypes (the last entry is a tab in 7.0) dialog. You'd also have to set the stereotype not to show on your diagrams. I'll leave you to find that setting in the help file.

I think semmel is describing the Notes compartment - where the options are more limited. I suspect the colour is hard coded. Either I've mentioned it in the forum or reported to Sparx this needs to be customizable; for the reasons semmel's mentioning.
If you start mucking around with the fill colour you immediately see the limitations.

Quite correct, if this is the notes compartment. Unfortunately, adding the compartment opened up this issue, as well as others.
Sigh...

The notes compartment text colour is configurable on the 'Standard Colors' page of the options dialog.
