I can seem to display the guard text/label of any link from a gateway, say. What am I missing?

Do you mean "cannot" by any chance? Otherwise, I don't think I'm getting your point. [Which could just be a limitation on my part.]

I cannot see the text being displayed when I enter it in the Guard field of a Link between two BPMN activities or Gateway

You need to enter it as the ConditionExpression tagged value. Ctrl+Shift+6 to show the Tagged Values window.
