Requirement Priority changeable

Hello,

i got an nice question about the requirements priority.

Is it possible to change the Levels -high-medium-low into other words or other scale's ?

For example i want to have 5 different priorities -high-medium-low-improvement-wishlist.

Also i want to start all requirements in state high (so the pm has to lower it manually to get his head of the effort for everyone).
Is it possible to change the default?
