How do I replace the ea.gif in the generated website; from within EA?

Modify the HTML style template.  (See http://www.sparxsystems.com.au/EAUserGuide/index.html?webtemplate.htm)

If found the logo on the 'Page - Index' template.

ok but where is ea.gif _stored_ ?

You need to be able to replace the file name in the template and add a new image, that can be used in the generated documents...
