Does right-click on the diagram and select Properties then the Elements tab and untick “Show Element Stereotypes” help with hiding the stereotypes of the information items conveyed? I have a note that it does, but right now am unable to create a diagram where the stereotype of the item conveyed is visible to prove it!

Yes, it turns the display off. Along with all element's stereotypes.

Just to clarify, the behaviour I am after is either 1) turning off just connector stereotypes or 2) having connector stereotypes displayed only once.

Just to reiterate this behaviour only occurs because I have stereotyped the out-of-the-box InformationItem.
