General Board / Requirement Model Properties

Hi,
I am setting up my project and I had a couple of questions which I was hoping someone would be able to help me out with:
1) If I wanted to change the possible values that i can pick from for any of the following properties of a requirement model, how would i go about doing that:
a) Priority (Currently limited to High, Medium and Low)
If I wanted to add another priority, how would I do
this?
2) What does the "Key Words" property that is associated to a Requirement model represent and how would I use that?
