When you need to create large number of requirements list may be a better option. EA also allows you to add requirement elements to a diagram, when you want to add the requirement to a decision model or other model diagrams to visually represent traceability and other relationships.
You can search for diagrams from the search bar in the New Diagram Wizard when you know the diagram group.

Yes. Using Enterprise Architect’s built-in document generation feature, you may create a diagram report in RTF or DocX format. Alternately, You may want to save the diagram as an image file and insert it to word document manually.

Yes you can. Creating a relationship matrix between stakeholders and components will give you the Stakeholder-component relationship view.
