Creating a profile stereotype for a subactivity

Subactivity does not appear in the list of metaclasses available for creating profiles.  I want to create a stereotype of a subactivity for my profile.  I would like to have a standard set of profile tags available for tagging sterotyped sub-activities.

Subactivity isn't really a separate element type: it's an Activity with "Set as Composite" pre-set. In your profile, you just need to extend the Activity metaclass.
