Can I use odbc to connect to a database to retrieve an existing oracle schema for my model?

Yes. Read the documentation.

Be very sure that your DBA has granted you all the necessary privileges to discover schema details. In the case of Oracle these might not match the set that you would normally have as a system user.

PS: You can easily find the correct help pages by opening an EA model and from the main menu choosing Project | Database Engineering | Import DB Schema from ODBC. Click the Help button on the dialog and go from there.
