How do you create a diagram label and specify font

How do you create a diagram label and specify font? This sounds so simple yet is impossible to find in the UI.

When you say "diagram label" do you mean one of these: Diagram Properties Note? If so, follow the instructions on that help page to create one, then right-click > Appearance > Set Font...
