On a connectors the are a number of labels that can be visible

The Middle Top Label displays the "name" of the connector.

Where do the other labels obtain their values from.

For example I'd like to use the Middle Bottom label or some of the other labels to show information.

Depends on the type of connector.

Ah, in this case lets say in Information Flow

Source Bottom -> Source Constraint
Source Top -> none
Middle Bottom -> Stereotype/keyword
Middle Top -> Name and/or conveyed items
Target Bottom -> Target Constraint
Target Top -> none

I would expect the bold items to be fairly consistent across connector types. The others variable.
